From our garden to your table
Rajaveda Pickles originated as a small-scale regional pilot. Some of the figs, apples, garlic, sour/tart grapes and fresh coriander come from the surroundings of A.T.V. De Hoefmolen. What the season and the garden make available forms the basis. The local harvest is combined with traditional herbs, spices and preparation knowledge from South Asian cuisine, with special inspiration from Ayurveda. The fruit remains recognizable in taste and structure.
Six flavours – and made with love
In Ayurveda, six taste directions are distinguished: sweet, sour, salty, pungent, bitter and astringent. In Rajaveda Pickles, we try to bring these flavors together.. For the sweet fig, we use lime juice and juice from sour/tart grapes from the garden to add acidity and tartness.

What can you expect in the jar?
We use suitable parts of the harvest as fully as possible. Therefore, in addition to fig or apple, you can also use edible pieces of garlic stem or flower bud and fresh herbs. This production includes fresh coriander leaves from the Netherlands and fresh curry leaves from Sri Lanka. The basis is regional as much as possible; special Ayurvedic and South Asian herbs come from further afield where it is needed. Only healthy, suitable and food-safe harvest is processed.
A local pilot
The production is deliberately small and seasonal. Through the garden store, we want to learn from reactions to taste, structure, use, packaging and price. In the long term, surplus but good harvest from other gardeners will also be given a destination.
Oils, herbs and allergens
For taste, mouthfeel and preparation, we use vegetable oils, including sesame oil, olive oil, sunflower oil and mustard oil. In addition, the recipe contains various herbs and spices, such as fennel, cumin (jeera), fenugreek, turmeric, saffron and asafoetida. The exact composition may vary from batch to batch.
NOTE: contains MUSTARD and SESAME. Always check the label of the jar in question for ingredients and allergens. If you have a known or suspected food allergy, do not use the product before you have determined that the ingredients are suitable for you. A small sample amount is not a reliable allergy test.
Use – start small
Rajaveda Pickle is a powerful seasoning. For example, start with about one teaspoon with rice, bread, vegetables, salad, soup, pasta, legumes or a hot meal. More is not automatically better: taste consciously and see what amount and taste suits you.
Storage and Serving
- Keep refrigerated according to the advice on the label.
- After opening, keep refrigerated and always close the lid tightly.
- Always use a clean, dry spoon
- Only remove the desired portion from the refrigerator and allow it to come to room temperature briefly before eating.
- For this pilot, we recommend: after opening, use preferably within about 4 weeks.
- In case of mould, a bulging or leaking lid, a clearly different odour or other doubt: do not use. A layer of oil over the product is not in itself a guarantee of microbiological safety. The final shelf life and storage instructions are further substantiated during the pilot.
